Roebuck Estates, founded in 2013 by two friends, Michael Smith and John Ball, is located in the heart of West Sussex. United by a passion for wine, their goal is to produce exceptional vintage sparkling wines from estate-grown fruit sourced from Sussex's finest vineyard sites. The estate covers six parcels over 120 acres, growing classic Champagne grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier. A rich, yet beautifully balanced wine, deep golden in colour. Delightful notes of baked apples, honey and a biscuity richness, layered with hints of toasted walnuts and candied citrus peel. Delicate bubbles, and a velvety texture leading to a long-lingering finish.
Carefully selected bunches of Chardonnay, Pinot Noir and Pinot Meunier grapes were harvested by hand and gently whole bunch pressed. Produced according to the traditional method, a small proportion of this wine was partially fermented in aged Burgundian oak barrels followed by a generous period of lees-ageing in bottle for 96 months.
