Villa Sandi

Villa Sandi is owned and managed by Giancarlo Moretti Polegato and his family. The journey began in the 1920s, Mario Polegato, grandfather to Giancarlo, obtained some vineyards and began farming. After the Second World War, the family-owned enterprise became all encompassing. From Mario to his son Divo and wife Amalia, to their sons Mario and Giancarlo. The two brothers were incredibly passionate about the wine industry with Mario an oenologist whereas Giancarlo focused on the financial side. Unfortunately, their family had to deal with much tragedy with Mario senior being crushed by a runaway cart of wine barrels, and Divo passing away prematurely in 1979 when he borrowed Mario junior’s...

Very pale straw yellow in appearance. Intense aromas of fruit and acacia flowers. Persistent perlage and a harmonious finish.
Excellent as a aperitif. A good accompaniment to fish marinated with delicate aromatic herbs, and herb-based starters.
Whole grapes are put into the pneumatic press for soft pressing and the resulting must, after a first racking, is put into controlled temperature tanks where it remains until it is used for the production of the sparkling wine. The must with added yeast cultures selected by Villa Sandi is then put into vessels where fermentation takes place at a controlled temperature of 15-16˚C to enhance all the harvest fragrances. Upon reaching the required alcohol and sugar content fermentation is stopped by refrigeration. After a short settling period, the sparkling wine is ready for bottling.
