Located in the village of Ludes, Ployez-Jacquemart was established in 1930 by Marcel Plyez and his wife Yvonne Jacquemart. It is now run by the third generation, Laurence Ployez and all grapes are sourced from the surrounding Premier Cru & Grand Cru vineyards. All of the work in the vineyards is done by hand, from pruning to harvest. Only first press juice is used to produce Plyez, and the wines undergo a very slow fermentation in the 25 metre deep cellar resulting in extremely fine bubbles. When the wines are disgorged, only a minimal dosage (typically 3-4 grams per litre) is added.
