Colombard is one of the world's great blending grapes, most famously used alongside Ugni Blanc and Folle Blanche in the production of Cognac and Armagnac. It is known for its neutrality, which makes it well suited to this purpose. However in the past few decades it has been increasingly used to make delightfully light, refreshing, crisp, dry whites with fresh green apple flavours. It has also proved popular in California, South Africa and Australia, where it has become a favourite for winemakers, with the grape displaying more racy tropical fruit characteristics.
