A noble black grape variety grown particularly in the Northern Rhône where it produces the great red wines of Hermitage, Cote Rôtie and Cornas, and in Australia where it produces wines of startling depth and intensity. Although the vine is productive and relatively disease resistant, in order to retain quality, the yield and productivity need to be restrained, as the deep, dark-fruit qualities, the aroma and acidity are reduced as yield increases. Shiraz wine shows aromas and flavours of black fruits and pepper, then developing notes of liquorice and chocolate in hotter conditions and, with age, leather, truffles and earthy aromas. As Shiraz wines age they gain in subtlety, elegance and complexity.
